WHere is a simplified take on a beverage featured on our latest menu. Designed as a batch prepared mix that's packed with essence of a festive period, rendering it perfect for a festive gathering. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or to mix additional servings of bikinis.
Bikini Recipe
Makes enough for 10 servings
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Place all the components in a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, take off the heat and leave to cool down fully. Decant into an clean bottle, close it and refrigerate it in the fridge, where it will keep for around four weeks.
To make Batch Mix: Mix all the spirits and syrup in a big jug, let it rest for 60 minutes, then pass it through preferably using muslin, to ensure it's fully clarified.
To serve: Measure 85ml of the cocktail base into your stirring glass filled with ice, gently stirring carefully for about 60 seconds to chill. Filter to a cold coupe glass or similar, decorate with some cranberries and complete it with a light spray with the mandarin essence above the glass.
